An all time Favorite Best Guacamole Recipe… ever (in my opinion)! A mix of chunky and creamy avocado, seasoned perfectly with lemon and lime juice, chives, onion, and garlic. Happy sigh.
4 large Hass avocados
2 tablespoons finely chopped onion (my favorite is sweet yellow, but white, red, or even scallions work too)
1 clove garlic, minced
2 tablespoons fresh chives, finely chopped
1 lemon, juiced (1–1/2 tablespoons)
1 lime, juiced (1–1/2 tablespoons)
2 teaspoons finely chopped jalapeño (optional)
kosher salt and pepper to taste
Cut the avocados in half lengthwise. Remove the pit, remove the avocado from the skin, and place into a bowl.
Add the lemon and lime juice, onion, garlic, chives, jalapeño (if using), salt and pepper to taste. Mash with a fork or a pastry cutter until half chunky, half smooth and creamy.
Serve immediately with tortilla chips, pita chips, or cut veggies.
If the avocados are firm, use a pastry cutter — it makes the job a LOT easier! Also, I read that if you need to refrigerate the guacamole, place half an onion on top to preserve its color. It actually works!
