Easy to blend up, this smoothie combines pineapple, coconut milk, yogurt, and sweetened shredded coconut.
We’ve used frozen pineapple chunks because they’re easy, but swapping fresh pineapple is even more delicious. Simply add a cup of ice cubes to the blender.
Pour into 2 glasses, add a straw, sit back, and dream of tropical islands.

Ever since our son came home from Panama, he’s been craving tastes of the tropics. And lately, I’ve been joining him. This smoothie satisfies those cravings! Here’s what you need:
- Pineapple chunks: You can use frozen or fresh pineapple
- Coconut milk
- Vanilla Yogurt (or coconut yogurt)
- Shredded coconut: Unsweetened or sweetened.
- Honey is optional if you like smoothies a bit sweeter

Coconut Pineapple Smoothie
Equipment
Ingredients
- 2 cups frozen pineapple chunks or use fresh pineapple, see “notes”
- 2/3 cup coconut milk
- 1 (6-ounce) vanilla yogurt or coconut yogurt
- 2 tablespoons shredded coconut
- honey optional for added sweetness to taste
Instructions
- Combine the frozen pineapple chunks, coconut milk, yogurt, and coconut in a blender. Blend until smooth. Thin with additional coconut milk if desired. Pour smoothie into two glasses, add a straw, some toasted coconut if you’d like, and take a trip to the tropics!
Notes
- Pineapple: To substitute fresh pineapple for frozen, add 1 cup ice cubes to the blender. If using frozen pineapple and it’s a bit tart, drizzle with a little honey.
