Pineapple Coconut Smoothie: a simple and healthy breakfast or snack that will taste like a vacation in every sip.
2 cups frozen pineapple chunks (or use fresh pineapple, see “notes”)
2/3 cup coconut milk
1 (6 oz) container vanilla or coconut yogurt
2 tablespoons shredded coconut
Combine the frozen pineapple chunks, coconut milk, yogurt, and coconut in a blender. Blend until smooth. Thin with additional coconut milk if desired. Pour smoothie into two glasses, add a straw, some toasted coconut if you’d like, and take a trip to the tropics!
To substitute fresh pineapple for frozen, add 1 cup ice cubes to the blender. If using frozen pineapple, and they’re a bit tart, drizzle with a little honey.
