Weekly Dinner Meal Plan: Apr 8 – 12, 2019
We’re easing into April and all the beauty it brings. Incredible pinks and greens and lavenders and yellows are everywhere, catching my eye with every trip I take.
And that means the produce isles too. The colors are gorgeous and even tantalizing. I’m thinking and inventing lots of ways to use these beautiful products of spring.
How about you? What are you seeing and loving this month?
For me, right now, it’s all things with purple hues. I don’t know why! I’m always a pink lover.
But especially in veggies, my eye is drawn to purple. So… as you peruse this week’s weeknight dinner meal plan, you’ll see a LOT of purples with these colorful entrées.
From cabbage soup to a mock fried rice, a coconut curry noodle bowl to a salmon salad and even a quesadilla. The treat this week? Yes — I had to keep that purple too; it’s naturally sweet, healthy, and delicious.
For those purists out there. I know, Tuesday’s dinner doesn’t have purple. But it does have spring green. And that counts too (kind of)!

With the produce market brightening with all kinds of beautiful colors, I’m in the mood for vibrant veggies. And healthy dinners. This Slow Cooker Cabbage Soup is one of my favorite ways to brights lots of veggies to the table. Simply and easily. It’s comfort food, all year long. I’m serving with a slice of crusty French bread for the guys and a sprinkling of freshly grated Parmesan cheese.

Tuesday: Cauliflower Rice with Steak
Keeping it low carb today with this delicious “fried rice” kind of dish. Swapping the “rice” for “cauliflower” skips the carbs but not the flavor. “If you want to make this recipe vegetarian, swap sliced mushrooms for the steak. Either way, you don’t have to be on a low-carb diet to love this 30-minute dinner.”

Wednesday: BBQ Chicken Quesadillas
