Easy Flavor Packed, Healthy Weeknight Dinners
Weekly Dinner Meal Plan: Apr 15 – 19, 2019
I’m guessing this week before Easter is as busy for you as it is for me. We’re dying Easter Eggs (or speckling them, which is my favorite way), making all kinds of Easter breads, Easter cakes, and treats galore.
This weekend will be filled with visiting family, Easter egg hunts, baskets, brunches, and more.

But for this week, as I mentioned, we’re keeping weeknight dinners simple. But not without flavor… healthy, delicious flavor.
For Good Friday… Some fast, while others eat seafood, as they have throughout Lent. We’re keeping it incredibly simple with a childhood favorite that you may or may not need a recipe for.
The week before Easter, simple foods, packed with healthy flavor.

“If you love Thai chicken satay or the peanut sauce that accompanies it, you will love this “chopped satay salad.” It’s essentially chopped vegetables + flavorful dressing + herbs + toasted nuts. It comes together relatively quickly (especially if you have a food processor) and is infinitely customizable given the produce you have access to at the moment as well as to your tastes and preferences.”

Tuesday: 15 Minute Prep Sesame Noodle Bowls
“The sauce can shake up in a jar and the noodles can cook in 2 minutes (serious). And just like that, you have sesame noodles. And said sesame noodles are, in fact, the base of the sesame noodle bowls, so basically you’re done. Now it’s just up to you how extra you want to get with your bowl-ing.”

Wednesday: Tex Mex Migas
“Migas is a popular Tex Mex egg dish made with chopped corn tortillas, cheese, tomatoes, jalapeños, and onions. I serve it plated with tortillas on the side, but they can also be wrapped in a tortilla, taco style.”

Friday: English Muffin Tuna Melts
Many Catholics fast on Good Friday. Other’s abstain from meat and only eat seafood, as they have during Lent. We decided to keep it simple and kid friendly for this Good Friday meal. It’s a childhood favorite and a walk down memory lane. Most likely you do NOT need a recipe for this idea… but we’ve provided one just in case.
