Simple, Healthy Weeknight Dinners

Weekly Dinner Meal Plan: Apr 29 – May 3, 2019

These simple, healthy weeknight dinners satisfy all my hot buttons this week. First, they’re simple, secondly, they are healthy. A win on all accounts!

Monday begins with an upgraded Instant Ramen bowls. A chance to use weekend leftovers — and make it extraordinarily delicious! Tuesday is a throwback fish entree, Wednesday is a seasonal pasta dish, Thursday is breakfast for dinner — and Friday is a spring pizza!

The treat? A little decadent — but decidedly delicious. Which makes it worth it!

Tuesday: Broiled Tilapia With Yogurt and Herbs
