Easy, Almost Summer Tastes

Weekly Dinner Meal Plan: May 6 – 10, 2019

The days are growing longer. The sun is shining more brightly and warmly in my neck of the woods. I’m longing for easy almost summer tastes and light, simple dinners.

This week’s healthy weeknight dinners reflect those feelings. Simple, fresh… and almost summer easy!

With the Kentucky Derby on Saturday and Cinco de Mayo on Sunday, weekend eats are, shall we say, probably indulgent. This week’s simple, healthy weeknight dinners will make up for weekend overload!
