GET THE RECIPETuesday: Coconut Lime Shrimp Packs with Summer Vegetables
Hitting the grill (or indoor grill) for a speedy 20-minute shrimp recipe. Combining the coconut lime marinade, zucchini and mint makes this dinner restaurant quality but simple, simple, simple!
GET THE RECIPEWednesday: Baked Chicken Legs with Herbs and Lemon
“Whole chicken legs are cheap, easy to roast up, and just plain delicious.” Serve with fresh snap beans and roasted potatoes.
GET THE RECIPEThursday: Zucchini Noodle Pad See Ew
“This recipe for healthy pad see ew with zucchini noodles is made with grass-fed beef, no refined sugar, and can also be easily adapted to be low FODMAP. Just skip the cashews and omit the garlic, as I did, and it will still be fabulous.”
GET THE RECIPEFriday: Sweet & Spicy BBQ Bacon Hawaiian Turkey Burgers
A lightened up, healthier burger. “I love serving these burgers in lettuce wraps or whole grain buns/sandwich thins with a side of sweet potato fries. It’s a delicious weekend meal and so much better than any fast food drive-thru (obviously!).”
