A perfect and quick yet hearty breakfast to feed the crew on a busy Saturday morning.
2 tablespoons butter
1 cup flour
1 cup milk
1 tablespoon sugar
1/2 teaspoon cinnamon
1/2 teaspoon salt
Garnish with fresh fruit, powdered sugar or whipped cream.
Preheat oven to 400 degrees.
Place butter in a 12-inch cast iron skillet and place in the preheated oven for 3 to 5 minutes or until butter melts. In a mixing bowl with a rotary or egg beater, beat the eggs until combined. Add flour, milk, sugar, cinnamon and salt and continue to beat until smooth. Pour into oven heated skillet and immediately place back into the oven and bake for 25-30 minutes until nicely browned and puffed.
Garnish with seasonal fruit and powdered sugar.
