Here’s What to Cook (Oct 21-25): Fall 20 Minute Dinners
If your weeknights have become as hectic as mine, you’ll love these fall-inspired 20-minute weeknight dinners. Keeping dinner healthy, easy, and satisfying!
This week’s dinner menu ideas have two selections of seafood — salmon and an easy, very popular shrimp and grain bowl. To round out the week we’ve scheduled a quinoa bake, cold sesame noodles, and a quick, 20-minute chili recipe for Friday.
The treat this week? I know. I’m pushing it a little with this Halloween treat. But honestly, those little mini Costco candy bars sitting in my pantry are becoming problematic. I can’t stop thinking about peanut butter and chocolate.
But if you’d like a healthier peanut butter and chocolate choice, these Peanut Butter Granola Bars with Chocolate Chips are amazing!

It's a busy season, weeknight dinners are made do-able with these delicious fall-inspired 20-minute dinners!
Monday: 20 Minute Honey Garlic Shrimp
"Ready in 20 minutes, this healthy dinner will join your regular dinner rotation. Serve with brown rice and vegetables, grill on skewers, or serve over salad."
Tuesday: Skillet Italian Chicken Quinoa Bake
Italian Chicken Quinoa Bake is a quick and easy, 20-minute one-pot skillet meal that’s protein-packed, healthy, and incredibly delicious flavored with Italian spices we love. Add a side salad and dinner is done! To speed things up -- meal prep a batch of quinoa over the weekend.
Wednesday: Classic Sesame Noodles with Chicken Recipe
"Classic sesame noodles become a healthy meal with lean chicken and tons of veggies in this quick recipe for Asian noodles. Be sure to rinse the spaghetti until it's cold, then give it a good shake in the colander until it's well drained. Are you a spiralizing pro? Swap 5 cups of raw zucchini, carrot or other veggie “noodles” for the cooked pasta."
Thursday: 10-Minute Maple-Crusted Salmon

Serve with a grain of choice and a green vegetable. I'm serving over minute brown rice and steamed broccoli so everything is done at the same time!
Friday: Fast and Easy Healthy 20-Minute Chili Recipe
Fall and winter seasons demand a good pot of steaming and hearty chili to ward off the blustery seasonal days — or to celebrate your favorite team at a tailgate party. While many chili recipes can take hours -- this is ready in 20 minutes! Garnish with your favorite toppings, a side salad -- and maybe cornbread. Happy Friday!
