Our garden is beginning to produce zucchini and small green tomatoes are emerging on the vines. Lettuce and spinach and a whole host of herbs have been proliferating for some time.
With even warmer weather coming into the Puget Sound, I have high expectations of more soon to come.
This week we’re focusing, as always, on dinners that are quick and healthy, but that also features some of the best of summer eating.

This week we’re feasting on a super easy and healthy, vegetarian black bean burger, a favorite takeout redo on Kung Pao Chicken, a skillet pork chop with peaches, a delicious and easy pasta, and a summer pizza.
