1/2 cup (1 stick) butter
1 1/4 cup chocolate chips
1/4 cup unsweetened cocoa powder
1/4 cup neutral oil (vegetable or coconut)
1 cup granulated sugar
3 large eggs
1 teaspoon instant coffee granules
1 teaspoon pure vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
Preheat the oven to 350 degrees and lightly coat a 10-inch oven-safe skillet. Set aside.
Melt the butter, chocolate chips, and unsweetened cocoa powder in a medium bowl set over simmering water. Let cool slightly before stirring in the oil, eggs, coffee granules and vanilla. Then add the flour, baking powder, and salt; mix until just incorporated. Pour the batter into the prepared skillet and spread into an even layer using a spatula.
Bake the skillet brownie until the surface appears set, a toothpick inserted into the center should come out mostly clean; 35 to 40 minutes. Let cool completely before cutting into wedges — or serving family style with spoons!
