An easy fix, guilt-free treat — Healthy Peanut Butter Chocolate Chip Cookies. Moist with honey and mashed banana, rich with dark chocolate!

- 3 tablespoons butter, melted
- 1 teaspoon vanilla
- 1 large egg, slightly beaten
- 1/3 cup honey
- 1/4 cup peanut butter
- medium banana, mashed
- 1 cup old fashioned oats
- 1 cup whole wheat flour
- 1–1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chocolate chips (my preference is dark chocolate)
Instructions
Preheat oven to 350° and line a baking sheet with parchment.
Whisk together melted butter, vanilla, egg, honey, and softened or warmed peanut butter. Add mashed banana.
In a separate bowl combine oats, flour, baking powder, and salt. Fold into the peanut butter mixture and add chocolate chips.
Portion cookies onto prepared baking sheet with a cookie scoop (affiliate link). Bake until golden, about 9 minutes in my oven, depending on the size of each cookie.
