Healthy Veggie Weekly Dinner Meal Plan: Mar 18 – 22, 2019
I’m planning this menu on Friday, at the start of a festive St. Patrick’s Day weekend. I’m already anticipating amazing food, fun, and laughter.
Note the emphasis on amazing food. Not all of it healthy. But celebratory and fun.
So next week, I’ll be making up for it with lots of veggies, including a Meatless Monday option of an incredibly delicious Vegetarian Pad Thai dinner.
But we will most definitely not be sacrificing flavor this week. From Pad Thai to Tinga, Beef and Broccoli and more. All are healthier, quicker versions than our takeout favorites.

Taking Meatless Monday to a whole new delicious level with this Vegetarian Pad Thai Redux! “we decided that we would make our own version – lots of vegetables, minimal oil and no sugar. We have to say this dish might be less traditional but it is still high on the delicious scale. And if you’re not too concerned with being vegan this works stupendously well with fish sauce and a scrambled egg or two.”

Tuesday: Sheet Pan Chicken Tinga Bowls
“This chicken tinga is juicy and delicious, brain-less, totally hands-off (hello sheet pan), generously saucy, and paired with some buddies like roasty bell peppers and quinoa and black beans to round it out into a meal that tastes like my favorite tacos of all time and yet is practically the same as a salad.”

Wednesday: Favorite Takeout — Beef and Broccoli
A grain bowl classic and favorite takeout too is easily made at home. Not to mention… budget friendly. It’s one of my favorite go-to quick weeknight dinners. Serve with your favorite grain — brown rice, farro, or other grain of choice.

Thursday: Chicken and Sun Dried Tomato Orzo

Treat: Cast Iron Irish Apple Cake
I know we celebrated St Patrick’s Day last Sunday… but some treats just need a redo. This is a simple Irish Apple Cake that in my humble opinion — is perfect all year long. Plus, it’s so simple, it’s an easy cake to whip up for the weekend!
