Healthy Veggie Emphasis Week

Weekly Dinner Meal Plan: Mar 18 – 22, 2019

I’m planning this menu on Friday, at the start of a festive St. Patrick’s Day weekend. I’m already anticipating amazing food, fun, and laughter.

Note the emphasis on amazing food. Not all of it healthy. But celebratory and fun.

So next week, I’ll be making up for it with lots of veggies, including a Meatless Monday option of an incredibly delicious Vegetarian Pad Thai dinner.

But we will most definitely not be sacrificing flavor this week. From Pad Thai to Tinga, Beef and Broccoli and more. All are healthier, quicker versions than our takeout favorites.

It’s what’s for dinner this week!

We have to say this dish might be less traditional but it is still high on the delicious scale. And if you’re not too concerned with being vegan this works stupendously well with fish sauce and a scrambled egg or two.”
