Weekly Dinner Meal Plan: Mar 25 – 29, 2019
It’s the first full week of spring — and I think we’re all ready for a little sunshine! I’m loving the fresh baby green leaves popping up everywhere. Not to mention my favorite pink cherry and plum blossoms whose buds are beginning to flower.
The days are growing longer, the sun a bit warmer. It’s time for lightened up weeknight dinners. Simple and delicious and full of fresh veggies.
This week’s dinner meal plan begins with a low-carb Cauliflower Pizza with asparagus and zucchini. I’m a new fan of cauliflower pizza crust and it’s easier to make at home than you might think! We’ve also put on the menu an easy Korean favorite on Tuesday with a Spicy Salmon foil packet on Friday.
The treat? I don’t know why but I’m craving some old fashioned southern comfort. This week — it’s a classic Rice Pudding.

We’re keeping it low carb and keto friendly with this Cauliflower Pizza Crust with Asparagus and Zucchini. It’s easy and incredibly delicious! While making your own pizza crust is simplier than you might think, there are shortcuts if time is critical. There is always storebought cauliflower pizza crust (like Trader Joe’s) or skip a couple of steps and buy pre-riced cauliflower from the frozen or fresh section of your market.
