Weekly Dinner Meal Plan: Jan 7 – 11, 2019
The first week of a new month, and a fresh start to a new year. It doesn’t get better than that in my book.
This week we’re easing back into regular schedules… and healthy eating.
I’ve chosen these dinner ideas because they’re simple, are made ready in 30 minutes or less… and are healthy.
Plus, I’m increasing our protein this week — as well as veggies. And these skillet dinners fit that objective perfectly.
And somehow… skillet dinners also seem fun and festive! Not quite ready to let go completely of last season’s fun.
It’s what’s for dinner this first full week of January!

Week at a Glance
Monday: Pasta with Pecorino, Guanciale & Black Pepper (Mezze Maniche alla Gricia)
Tuesday: Maple Glazed Wild Salmon

Monday: Pasta with Pecorino, Guanciale & Black Pepper (Mezze Maniche alla Gricia)
“This classic Roman pasta sauce always features Pecorino Romano cheese, guanciale, and plenty of black pepper.” For simplicity sake… and a Monday, I’m switching out the guanciale (which is an Italian cured meat) for bacon. Here’s a bit more info on the difference. I’m also adding zucchini to the pasta to bump up the veggies and adding wilted greens (spinach or kale).

Tuesday: Maple Glazed Wild Salmon
“The rich flavors of maple are enhanced with the savory additions of ginger, soy sauce, and garlic. I love to make this with Wild King Salmon, otherwise known as Chinook Salmon in my neck of the woods. But it is delicious with any variety.” Serve with spinach salad, cherry tomatoes and either steamed rice or baby red potatoes and maybe some crusty bread.

Wednesday: Pan-Seared Pork Chops with Roasted Fennel and Tomatoes

Thursday: Sicilian-Style Chicken Thighs

Friday: Healthy Broccoli and Sausage Skillet Pizza
Store-bought whole wheat pizza dough makes this recipe a breeze. Trader Joe’s always stocks it. “Using a cast-iron skillet for this healthy pizza recipe gives you deep-dish pizza results with extra-crispy sides, but you can make it free-form too. Stretch the dough into a 12-inch oval and place on a large baking sheet coated with cooking spray. Top and bake at 450°F until the cheese is melted and the crust is crisp, about 20 minutes.”
