Here’s What to Cook This Week: Simple Weeknight Dinners

Weekly Dinner Meal Plan: June 10-14, 2019

Schools in my area are out this week. It seems like the first week of summer. Hope you’re celebrating. If you’re looking for dinner ideas — we’ve got some delicious recipes in store.

From slow cooker recipes to pressure cooker, oven, and a simple chopped salad.

This week calls for a simple pressure cooker rotisserie chicken made in 28 minutes. Which will be made into three dinners. If you don’t have an Instant Pot, consider picking up a larger rotisserie chicken at your market. I love Costco — the price is right, and they serve a lot of people.

Happy second week of June. Don’t forget the father’s in your life. Their day is coming next weekend.

Spicing it up for Wednesday with this incredible chopped salad. “Lime, peanuts, cilantro, carrots, green onions, vinegar, green papaya or mango, soy sauce, chili pepper, garlic, all packed together in a highly textured salad bowl!”


Thursday: Easy Skillet-Poached Salmon

Thursday’s dinner is courtesy of Martha Stewart. She says it’s, “Delicious warm or at room temperature, this poached salmon only takes 30 minutes and can be made ahead so it’s a hit with savvy home entertainers.”


Friday: Easy Homemade Green Chile Salsa Verde Chicken Enchiladas

Using the last of our Instant Pot Rotisserie Chicken with these “best ever chicken enchiladas: easy to make and even easier to eat. A super-simple homemade green chile salsa verde sauce and endless customizable options.” Serve with a seasonal green salad.

Rhubarb season can’t pass by without making, at least once, this family favorite rhubarb cake from my cousin Marilyn’s mom. Warm from the oven, with a melty dip of vanilla ice cream. Happy sigh.
