Hearty, Healthy Comfort Food

Weekly Dinner Meal Plan: Feb 4 – 8, 2019

With yesterday’s Super Bowl feasting, it’s back to healthy with plenty of veggies this week.

Plus, we’re celebrating Chinese New Year on Tuesday. Longevity Noodles is on the menu this week. It’s a traditional favorite recipe that’s a bit healthier than usual. So looking forward to Tuesday’s dinner!

As snow blankets much of the north and cold, winter temperatures prevail almost everywhere else, we’re looking forward to hearty, healthy comfort food.

But first… a housekeeping note. We’ve played around with the posting schedule for our weekly dinner menu. For months, we’ve posted the meal plan on Saturday. We tried once on Friday, and this post is posting on Monday. If you have a preference, we’d love to hear it! Comments below or email would be awesome. Thanks so much.

Stay healthy, keep warm… and eat your veggies this week. Punxatawny Phil saw his shadow this weekend… so spring really is right around the corner. Or… so they say. Smile.

Get ready for some easy, healthy winter comfort food dinners. It’s what’s for dinner this week.

Have a great week everyone!

Today begins Chinese New Year… or the celebration of Lunar New Year. “Noodles are a key part of Chinese New Year celebrations because they symbolize long life. We love this recipe for the tradition because it’s super-customizable based on your tastes. Try swapping in chicken for the steak. Can’t find Chinese broccoli? Use broccolini instead. Or swap out the mushrooms and broccoli altogether for snow peas and carrots.” For more recipes, ideas, and customs for celebrating, see our post here.
