1/2 cup oats (I use Old Fashioned)
1/2 cup milk
3–4 green onions, minced (about 2 tablespoons)
large egg, beaten
1/2 cup ketchup
1/4 teaspoon red pepper flakes
salt and pepper to taste
1 package ground turkey (about 1.3 pounds)
Preheat the oven to 350 degrees F. Generously coat a 12-cup standard muffin tin with cooking spray. Set aside.
Into a medium size bowl add the oats and milk; stir and let sit a couple of minutes. Then add the onions, beaten egg, 1/4 cup ketchup, red pepper flakes and salt and pepper to taste; stir to combine. Finally, add the ground turkey and mix together thoroughly.
Drop 1/4 cup portions or scoops of meatloaf into the prepared muffin tin cups. Top each meatloaf with a drizzle of the remaining 1/4 cup ketchup.
Bake uncovered for about 40 minutes. Remove from the oven and let sit for 5 minutes before serving.
