These Fudgy Mint Chocolate Brownies are densely rich with a double dose of chocolate and that oh-so-yummy distinctively cool mint flavor. Easy to make in both mini bites or in an 8 x 8 baking pan. Both ways are incredibly delicious and addictive to mint chocolate lovers everywhere.
10 tablespoons butter, melted
1–1/4 cups sugar
3/4 cup unsweetened cocoa powder
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon vanilla extract
2 large eggs
1/2 cup all-purpose flour
1 cup chocolate chips
1/2 cup mint chips
Preheat oven to 350 degrees. Spray either a mini muffin tin with nonstick cooking spray or an 8 x 8 square baking pan. Set aside.
In a microwave-safe bowl, or on the stovetop, melt the butter. Add the sugar, stirring to combine. Remove from heat. Stir in the cocoa, salt, baking powder, and vanilla. Whisk in the eggs, stirring until smooth. Add the flour and chocolate and mint chips.
For the Mini Double Mint Chocolate Brownies:
Spoon the batter into the prepared baking tin. Bake for 12 to 15 minutes or until a toothpick inserted in the center comes out clean. Run a knife around the edges of the mini brownie to lift out of the pan and set on a cooling rack.
Using a spoon, scoop the brownie mixture into the mini cupcake tins and bake for 12-15 minutes. Run a knife along the edge of the mini brownie to lift it out of the pan and let cool on a cooling rack.
For the 8 x 8 Square Baking Pan:
Transfer the batter into the prepared square baking pan. Bake for 30 to 34 minutes or until a toothpick inserted 1-1/2 inches from the side comes out clean and the center is set. Let cool completely in the pan before transferring to a board to cut into 16 squares. It’s easy to visually cut perfect squares by marking sections in half and then in half again.
