A simple Cucumber Salad with Creamy Greek Yogurt is a salad you’ll fall in love with. Distinctly crisp, refreshingly… and almost sweet. It’s a bit like a yogurt tzatziki that often accompanies spicy dishes.


Units Scale

2 cucumbers, halved and sliced thinly
1/2 red onion, sliced thinly

1/2 cup plain Greek yogurt
1 tablespoon white wine vinegar
2 teaspoons sugar
minced garlic clove
1/4 cup olive oil
1/2 teaspoon dried dill, or a couple of teaspoons of fresh dill
salt and pepper to taste


Half the cucumbers and slice thin; add to a medium size bowl. Slice the red onion thinly and add to the cucumbers.

To make the dressing: Whisk and combine the dressing ingredients in a bowl. Refrigerate until ready to make the salad and serve. The dressing keeps well in the refrigerator for 3-4 days.

To make the salad, simply gently mix together the ingredients. Salt and pepper to taste.
