Weeknight Dinner Plan: This week is all about summer family dinners. Comfort food family favorites, perfect for a summer start, that are healthy and easy too.
With the week leading up to Father’s Day next Sunday, I couldn’t think of a better weekly theme, than family favorites.
Healthy family favorites that also are perfect for the summer season.
Summer Family Dinners
When I think of family favorite dinners, spaghetti always comes to mind. We’re beginning the week with that classic; a whole grain spaghetti recipe that’s healthy too.
For Tuesday, it’s an easy Instant Pot dinner made with ground beef and always a favorite takeout.
Enchiladas are also often on the favorites list. This recipe is a twist on the classic by swapping quinoa for rice, and baking them casserole style.
Summers in my neck of the woods often have seafood chowder on the menu (I live in the Puget Sound area of Seattle). This smoked salmon chowder is nice twist on a favorite.
Then Friday comes with a grilling favorite that’s as easy as it is delicious!
While there are so many amazing summer treats, I have s’mores on the brain. We’re making a s’mores mug cake — but traditional s’mores around a firepit would be fun too!

Monday: Whole-Grain Spaghetti with Italian Turkey Sausage
"Total happiness in a bowl: pasta, sausage, tomatoes and herbs. The tomatoes get sweet and tender and turn into sauce with the stock and the pasta. Tuesday: Instant Pot Ground Beef and Broccoli

Wednesday: Quinoa Enchilada Casserole
