- 4 cups seeded and cubed watermelon
- 1 tablespoon finely minced fresh mint leaves (optional)
- 1/2 lime, juiced
- 1 tablespoon honey or agave nectar
Blend the watermelon, mint leaves and lime juice in a blender until pureed. Taste and see if any sweetener is needed. Pour the mixture through a fine sieve or cheesecloth to remove mint leaves and remaining fibrous melon. Press the mixture with the back of a spoon and into a bowl.
Pour the liquid into popsicle molds and freeze until solid. If using popsicle sticks, insert the sticks when the popsicles are partially frozen, about an hour later.
