Fresh lemon: juice & zest
In a large bowl, whisk together melted butter and sugar until smooth. Whisk in the eggs, vanilla, lemon juice, lemon zest, and yellow food coloring if using.
Scoop and roll dough into balls. Dredge generously in powdered sugar and transfer to a parchment-lined baking sheet, 2 inches apart. Bake for 9 to 10 minutes.
Bake for 9 to 10 minutes. Cool on the baking sheet for a few minutes before transferring to a cooling rack.
