Preheat the oven to 400 degrees F and lightly coat a 9 x 13-inch baking pan with cooking spray. Toss the sweet potatoes with a bit of olive oil and season with 1/2 teaspoon each of salt and pepper.

Add to the prepared casserole dish and roast for 15 to 20 minutes or until they begin to soften. While the sweet potatoes are roasting, chop the peppers and mince the garlic.
Whisk the eggs, 1/2 teaspoon each of salt and pepper, paprika, cumin, and pepper flakes. Then stir in cheese and 1/4 cup Parmesan. Add the bell peppers and spinach to the pan and toss together. Pour the egg mixture over the top.

Sprinkle the remaining Parmesan cheese over the top. Bake for 35 to 40 minutes or until the casserole is just set and a knife inserted near the center comes out clean. Let stand 10 minutes before serving.
