Bake the shell. Heat 2 1/2 cups of milk in a heavy bottom pan until hot. Whisk together the remaining milk, cornstarch, and sugar. When steaming, whisk in the cornstarch mixture into the hot milk. Continue whisking until thick.

Remove from the heat and stir in the vanilla. Cool slightly before pouring into the crust. Cover and chill for a minimum of 4 hours or even overnight.
When ready to serve, wash and chop the berries as needed for the top of the pie. Add to the middle of the pie and garnish with fresh mint leaves if desired.
