Weeknight meals can sometimes be hectic. Especially in the spring. The seasons have changed and with the longer days, schedules become busier. Meal planning, then, often takes a backseat.
With these busier days, I’m often asked by friends and family what I’m cooking for dinner. So here’s a peek at how I’m feeding my family this week.
It’s going to be a great week! These dinner recipes are extraordinary. The theme, other than fresh, yummy, and seasonal, seems to be cookbook recipes. Two of the recipes come from brand new cookbooks by amazing authors.

Monday: Orzo Primavera with Lemon, Asparagus, Broccoli and Cherry Tomatoes
A meatless dinner, Orzo Primavera with Lemon, Asparagus, Broccoli, and Cherry Tomatoes is like a little bit of spring… in a pot, or a bowl. Every bite filled with fresh veggies and delicious pasta. Add a green salad and crusty bread to finish off Monday’s meal.
Tuesday: Nigella Lawson’s Spring Sheet Pan Chicken
“In her brand-new cookbook At My Table (Amazon affiliate link), Nigella Lawson piles up a good bed for her chicken thighs, then mostly leaves them to commingle in the oven. The chicken thighs end up juicy within and crisp up top; the bed a deliciously schmaltzed-up, well-melded—and not burnt—spring vegetable medley, ready to be dished up over smashed baby potatoes or grains or all on its own.”
Wednesday: Butter Salmon Rice Bowls
“I served the buttery fish on top of a bowl of brown jasmine rice. A bunch of sliced avocado, some scallions, thinly sliced radish, a sprinkle of furikake seasoning (Amazon affiliate link). Major taste explosion.” To add another serving of veggies, roast a bundle of fresh asparagus along with the salmon.
Thursday: 20 Minute Tinga Tacos
“Do you have 20 minutes? You can make these because this is not fancy. This is just really, really delicious chicken tinga tacos. This is one of those rare recipes that comes together so quickly and somehow still rivals a restaurant-quality meal.” Serve with Spanish rice for a more filling meal and bean dip with taco chips, if desired. But really, everything is already in the taco!

Friday: Easiest Ever Spicy 3 Cheese Broccolini Pizza
Fridays and pizza just go together. This pizza is incredibly simple, especially when made with store-bought pizza dough. Or, pizza dough you’ve made ahead. If your dough is frozen, be sure to thaw it in the refrigerator Thursday night. Add a side green salad and a treat — like our Double Chocolate Chip Cookie Skillet!
