Weekly Dinner Meal Plan: April 23 – 27

A 5 night Weekly Dinner Meal Plan that’s easy, seasonal, and healthy. Plus, a weekly treat you won’t want to miss!

Weeknight meals can sometimes be hectic. Especially in the spring. The seasons have changed and with the longer days, schedules become busier. It’s easy for meal planning to take a backseat.

With these busier days, I’m often asked by friends, family, and readers what I’m cooking for dinner. So here’s a peek at how I’m feeding my family this week.

Here’s some great news! Did you know that for the next week, daylight will increase about 2 minutes and 8 seconds per day? That means by the end of this week, we’ll have gained almost 15 minutes of daylight. I can’t tell you how happy that makes me!

“Cooking in parchment packets means a dramatic presentation and an easier clean up (you can throw the parchment in the compost when you’re done); fresh spring vegetables and lean cuts of meat and fish are perfect for this preparation, since the tender veggies steam fairly quickly and the lower-fat proteins benefit by retaining moisture held in by the paper shell. (It’s also a great use for leftover cooked rice!)”

Tuesday: White Bean Soup with Smoked Turkey Kielbasa Sausage and Kale

With a nod to its Italian origin, we mix up the classic white bean soup by adding Kielbasa and bump up the nutrients with kale. Serve with freshly grated Parmesan cheese and crusty Italian bread.
