It’s week 18 and we’re moving into the month of May this week. Can you believe it? Time flies.
Weeknight meals can sometimes be hectic. Especially in the spring. The seasons have changed and with the longer days, schedules become busier. It’s easy for meal planning to take a backseat.
With these busier days, I’m often asked by friends, family, and readers what I’m cooking for dinner. So here’s a peek at how I’m feeding my family this week.
This is an exciting week. On Saturday, many of us will be celebrating two occasions, Cinco de Mayo and the Kentucky Derby. Oh my! What a day!

Week at a Glance
Monday: Tagliarini with Asparagus and Herbs
Tuesday: Honey Teriyaki Salmon with Cauliflower Rice
Wednesday: So Simple Stir Fry with Steamed Rice
Thursday: Creamy Lemon Chicken with Thyme
Friday: Taco Pizza
Treat: Mexican Chocolate Cookies and/or Kentucky Derby Chocolate Pecan Pie
Monday: Tagliarini with Asparagus and Herbs
A one-pot meal with few ingredients, that’s simply perfect for this season. From the newly published cookbook, “River Cafe London,” (Amazon affiliate link) author Ruthie Rogers says, “We cook this pasta when asparagus is in season and we cut them almost as thin as the tagliarini.” Serve simply with a tossed salad and perhaps a crusty loaf of French bread. And if you’re fortunate, they’ll be leftovers for tomorrow’s lunch!
Tuesday: Honey Teriyaki Salmon with Cauliflower Rice
“Baked Honey-Teriyaki Salmon and Asparagus with Cauliflower Rice, this 15-minute dinner is not just tasty, it’s also good for you!” The salmon can be marinated for 10 minutes up to 8 hours depending on your time.
Wednesday: So Simple Stirfry
This is one of my weeknight heroes. Its quick, healthy, and always a family favorite. Add your favorite veggies and meat and serve over steamed rice. Simple and tasty.
Thursday: Creamy Lemon Chicken with Thyme
“This simple recipe uses a small list of ingredients – chicken, olive oil, butter, garlic, thyme, lemon, flour, and milk. I usually have most of these in my pantry and don’t worry if you don’t have fresh thyme, although I really love the flavor. Dried thyme works in a jiffy!” Serve with steamed broccoli and mashed potatoes or mashed cauliflower.
Friday: Taco Pizza
“Two classic family favorites, pizza and tacos, come together in this easy weeknight meal that is destined to become a favorite in your home.” Serve with a green salad. And a treat, of course. It’s Friday!
