Weekly Dinner Meal Plan: May 7 – 11:
It’s week 19 and we’re fully into May. My peas are moving up their vines in the garden and I’m trying to be patient. The sun is growing warmer and our thoughts are beginning to think about summer!
We’re also thinking and planning for Mother’s Day this coming Sunday. We’ve gathered some great ideas for Mother’s Day at 31Daily. From brunches to breakfast in bed ideas. Which are, of course, easy and doable. Think about how you can spoil your mom, grandma… and special women in your life this week. Hint: Coffee and lattes go a long way!
I’m often asked by friends, family, and readers what I’m cooking for dinner this week. Weeknight meals in our house can be hectic, with everyone going in different directions. This week’s meals have fewer ingredients, are healthy comfort food, and will hopefully shave off some hands-on minutes in the kitchen.

Monday: Mediterranean Shakshuka
Start the week off right with breakfast for dinner! This Israeli comfort food, Mediterranean Shakshuka, is the epitome of easy and delish. Serve with an herbed salad and crusty bread. It almost requires that crusty bread!
Tuesday: Homemade Baked Mac and Cheese
I’m not sure why Tuesdays are hectic at our house — but they are! The ultimate comfort food is what’s on the menu tonight. It’s creamy, gooey, melty cheese will make everyone slow down — if only for a few minutes! Serve with a green salad loaded with veggies.
Wednesday: Turmeric Pork Chops
For a boost of protein and healthy turmeric, these pork chops are incredibly tasty, but also incredibly easy! It’s a win-win for sure! Serve with an arugula salad or greens of choice, steamed broccoli, and brown minute rice. Use the dripping in the pan to drizzling over the rice for extra flavor.
Thursday: Chicken Shawarma Stuffed Pita
An easy, delicious dinner, all wrapped up in a pita. The great news is… there might just be some left over for Friday’s lunch! Everything you need for dinner, is in the pita!
Friday: Crispy Salmon Burgers
So… it’s Friday! And Friday should be easy and fun. I try to serve fish at least once a week, so Friday’s the day. And it couldn’t be easier as it’s made with mostly pantry ingredients I always have on hand. Serve the salmon burgers on your favorite bun with sliced tomatoes and either a green salad… or our preference, a simple coleslaw.
Weekly Treat: Strawberry Rhubarb Crisp
