We actually celebrate all weekend long, with the culmination on Monday. I’m sure you do too!
Three days weekends are really awesome.
With that in mind, this weekly dinner plan is simple and healthy!

Memorial Day Monday: Slow Cooker BBQ Ribs
These ribs are so tender, literally, they fall off the bone. We’re busy during the day so I’m popping these into the slow cooker in the morning and finishing them on the grill when it’s time for BBQ. Along with ribs, serve a favorite potato salad, grilled corn on the cob, a summer salad, and cornbread. For dessert, yogurt mousse, and brownies. For me, it’s not Memorial Day without something chocolate! More red, white, and blue recipe ideas here…
Tuesday: Quick Taco Salad
This quick and easy Mexican taco salad is a favorite, easy and quick weeknight meal. Serve with an equally easy homemade guacamole.
Wednesday: Easy Sheet Pan Hawaiian Chicken
I love one pan dinners when the week is a bit crazy. This is a favorite with its tropical flavors. Serve with steamed rice.
Thursday: Foil Wrapped Salmon with Lime Garlic Butter Sauce
Easy to grill or bake in the oven. Serve with roasted potatoes, and asparagus. For the potatoes, I make a foil packet, spray the foil with nonstick cooking spray, then layer the potatoes on the foil, top with salt, pepper, a dash of thyme and a drizzle of olive oil. Close the packet tightly and grill or oven bake at 375 degrees for about 25 minutes or until soft. The time depends on how thick your slices of potato are.
Friday: Skillet Spinach and Chicken Enchilada Pie
It’s back to an easy Mexican favorite for the first day of June. Healthy and super tasty. Serve with a green salad.
