Weekly Dinner Meal Plan: June 11-15

Meal planning this week is a bit of a mixed bag… just like the weather. One foot in summer and one foot in spring. It’s like summer grilling… in sweaters and rain gear.

We begin the week with a beautiful summer-like salad with chicken and kale (which, by the way, you’ll see lots of kale type recipes as our garden is producing it by the bushel it seems). And we’ll end the week with a decadent family size fudgy and cakey brownie.

In between, there’s something for everyone.

Don’t forget… Father’s Day is next Sunday. Be planning for that. Here are some Father’s Day ideas

Out of the hundreds of seafood recipes they created over the years… this was one of “Dad’s favorites.” It’s a bright, pure seafood stew that comes together in just 20 minutes. Simmer tomatoes, stock, and wine, add seafood, simmer some more, and garnish. (That’s it!)
