Weekly Dinner Meal Plan: June 11-15
Meal planning this week is a bit of a mixed bag… just like the weather. One foot in summer and one foot in spring. It’s like summer grilling… in sweaters and rain gear.
We begin the week with a beautiful summer-like salad with chicken and kale (which, by the way, you’ll see lots of kale type recipes as our garden is producing it by the bushel it seems). And we’ll end the week with a decadent family size fudgy and cakey brownie.
In between, there’s something for everyone.
Don’t forget… Father’s Day is next Sunday. Be planning for that. Here are some Father’s Day ideas…

Thursday: Dad’s Favorite Seafood Stew
This recipe comes from a food blogger whose family was in the seafood business for more than 80 years. Out of the hundreds of seafood recipes they created over the years… this was one of “Dad’s favorites.” It’s a bright, pure seafood stew that comes together in just 20 minutes. Simmer tomatoes, stock, and wine, add seafood, simmer some more, and garnish. (That’s it!)
Friday: Zucchini Pesto Sausage Pizza
“Ready-to-use prebaked crusts are the secret to getting this pizza to the table quickly. Cut the zucchini and mozzarella as thin as possible to guarantee tender zucchini and expertly melted cheese in under 10 minutes. If you like to make your own pizza crust and have one on hand, prebake your crust for about 8 minutes before flipping it over and adding the toppings.”

They’re absolutely decadent, these Fudgy Cakey Family Size Brownies. Delicious– but decadent. And my guys love them. They bake in a 9″ x 13″ size pan and stand an inch tall when cut. A perfect blend of fudgy and cakey.
