Weekly Dinner Meal Plan: July 16 – 20

Summer garden veggies are beginning to flourish. In fact, I pulled my first zucchini out of the garden this week. It was an exciting moment! Zucchini will be making an appearance it lots of dinners, sides, and even desserts in the coming weeks.
When the zucchini ripens, it seems like the halfway point of summer. I refuse to think about that!
This week I’m planning meals that are both easy yet delicious. And healthy — filled with the seasons freshest ingredients.
Plus, on Thursday, it’s a pantry special that we love, and is so easy to bring to the table. With a sauce that almost instantly makes itself.
The treat? You know there’s always a treat. This one reminds me of summer, and Grandmother’s house, and that those warm summer evenings on the porch, watching the stars.

Tuesday: One Pan Lemon Roast Chicken and Asparagus

An easy Thursday dinner with salmon from the pantry, a sauce that almost instantly makes itself, and sweet peas from my garden. Although… it’s just as tasty with frozen! Serving with a huge green summer salad and Lemon Vinaigrette.
