Halloween 20 Minute Dinners Menu
A 5 night, Weekly Dinner Meal Plan that’s easy, seasonal, and healthy. Plus, a weekly treat you won’t want to miss.
It’s Halloween week — which means it will be busy, whether you have little trick-or-treaters that live with you, or little trick-or-treaters who will be ding-donging at your house.
A quick trick to Michael’s Craft Store today with harried moms filling their carts with DIY Halloween costume making supplies reminded me of just how hectic this coming week will be.
It’s time for easy, healthy, and even festive dinners that will be on the table in no more than 20 minutes.
Plus, a Halloween tradition at our house for Wednesday evening that’s fun, delicious, and super hearty.
It’s what for dinner this week!
Have a great week!

Monday: Pasta with Hummus, Olives, Feta, and Red Pepper
An under 20-minute dinner with a surprising twist! “Hummus not only adds a bit of protein to this pasta, but it also makes every bite super creamy without having to use actual cream.”
Tuesday: Apple Pecan Pork Chops
“This easy fall dinner recipe will help you forget about dry pork chops. Searing them in a skillet keeps them juicy, plus we smothered them with saucy apples and pecans.” A savory and quick dinner the night before Halloween. Serve with a large green salad.
Wednesday: Healthy 20 Minute Chili
On Halloween, my mom began a tradition that I think all of us kids carry out to this day. It’s chili night. A hearty dish that kept us warm as we ding-donged our way through the neighborhood. Serve with a healthy salad, cut up veggies, and always, a favorite cornbread. And then, of course, there are always those few candies that never make it into the trick-or-treater basket of goodies.

Thursday: Chicken Thighs with Peperonata and Roasted Broccoli
“We’re amazed by what this recipe achieves in just 20 minutes: crispy bone-in chicken thighs; a sweet, tangy, and savory pepper topper; and roasted broccoli. Part of the speed comes from being efficient with your pans—the pepper mixture cooks in the same pan used to crisp the chicken skin (adding fantastic flavor), and the broccoli and chicken roast together on a single baking sheet.”
Friday: Turkey Burger and Baked Sweet Potato Fries
With a busy week in the books, it’s time to take a deep breath and watch some high school football. Well… or a Hallmark Christmas movie. They’ve started you know. Happy, happy. I’m packing away the jack-o-lanterns and putting up the turkeys and cornucopias this weekend. A Turkey Burger with Baked Sweet Potato Fries is perfect for tonight!
Halloween Fudgy Peanut Butter Chocolate Swirl Brownies
It doesn’t get better than brownies for Halloween — especially peanut butter swirled chocolate brownies. Unless they also happen to be orange and black!
