Weekly Dinner Meal Plan: Nov 11-15
This week, a meal plan for five weeknight pantry dinners that’s easy, seasonal, and healthy. Plus, a classic treat you won’t want to miss.
I’ve challenged myself this week — and you too — to cook five dinners with mostly pantry staples.
The holidays are fast approaching, the stores are mostly decorated… and I’m feeling that tiny bit of panic. Until I remind myself that truly, we still have two weeks until Thanksgiving, and almost six weeks until Christmas. A lot of time!
But still… let’s keep dinner this week easy and delicious.
While most of the ingredients for these dinners will come straight from the pantry, there is added meat and produce. Protein is a big deal in our house, guys, workouts, extra energy… etc. You know the drill.
Did I mention “delicious?” I’m particularly looking forward to the Kimchi Fried Rice on Monday – and yes, it is very pantry friendly. And as always, the Salmon Chowder is a treat.
Speaking of treats.
It’s time for ooey, gooey chocolate chip cookies. It’s the one the kids in my life are always asking for.
So make your lists… stock up the pantry.

Fried Rice is the ultimate pantry staple. “The kimchi gets sautéed with onions and garlic and leftover rice (white or brown works) and seasoned to perfection. Then it gets topped with the VERY important scallion salad and you can add a fried or poached egg on top if you’re feeling jazzy. It’s literally dinner in under 20 minutes.”

Tuesday: Chicken Quinoa Enchiladas
Because we’re keeping it easy this week… and pantry friendly, I’m using store-bought enchilada sauce and then “Chicken, quinoa, cheese, black beans, spices! Tortillas, more cheese, sauce!” And that’s dinner! So good.

Wednesday: Quick and Healthy Sweet Potato Hash
Continuing with a comfort food theme — and one that’s pantry friendly, Sweet Potato Hash always fits the bill. Filled with healthy veggies and protein, a simple skillet meal that I’ll add a green salad to… and Wednesday dinner is complete.

Thursday: Quick Fix Salmon Chowder
A pantry staple chowder made with canned salmon. I’m picky about canned salmon — so it has to be good. But when it is, this is such a versatile, easy recipe to throw together at a moments notice. My guys need a large loaf of crusty bread to go with! Here’s my canned salmon recommendation…

Friday: Pantry Pasta with Chicken
An easy and quick meal using pantry staples. I’m including a couple of boneless skinless chicken breasts for added protein. Otherwise, it’s a simple Friday night meal — without a quick run to the market!

Treat: Chocolate Chip Cookies
When I mentioned “comfort food” earlier, before I even made out the weekly menu, these cookies came to mind. Is there really anymore more scrumptious than a chocolate chip cookie? These are my most requested cookies… ever. Simple… and delicious!
