One Pot Dinners for Busy Weeks

Weekly Dinner Meal Plan: Dec 3 – 7, 2018

A 5 night, Weekly Dinner Meal Plan that’s easy, seasonal, and healthy. Plus, a weekly treat you won’t want to miss.

If you’re like me, the days are flying past as we prepare for the holidays. Weekly schedules are already full, but with added social engagements, gifts, baking, planning… well, you know!

It’s the most wonderful time of the year!

And it is. And in order to enjoy it, midweek dinners need to be easy, and as always, healthy.

These are one pot/pan dinners that are not only simple and healthy but fairly quick too. The Bruschetta Chicken bakes a little longer, but the prep is easy.

The treat? Yes… my guys still need a treat. Otherwise, they’ll be digging into the freezer for the Christmas cookies I’m baking like crazy. This week’s treat is the “Easiest Brownies Ever.” Sounds great!

Here’s to another healthy week with meals made easy at home… in one pot.

I take any excuse to use my bamboo steamer. I purchased a 3-tier bamboo steamer from Sur la Table. It’s one of my favorite kitchen tools. It’s quick and simple… and the ultimate one pot meal. I’m serving with wilted spinach that I’ll steam along with the salmon and a cooked grain.
