We’re keeping our focus on pantry ingredient dinners this week. While they use only 5 ingredients, they’re healthy, tasty and will satisfy everyone.
This week’s dinners will use ingredients like pasta, potatoes, beans, bacon, cooked chicken, rice, eggs… and a few fresh greens that are easily swapped for frozen.
The treat? Yep. Five ingredients too. I can’t claim this one is healthy. Although… it is portioned controlled!
If you’re cooking three meals a day, as am I, these quick, easy, and healthy 5 ingredient pantry dinners should help.

Weeknight Dinner Meal Plan with 5 Ingredient Pantry Dinners. Quick, healthy, and easy meals with pantry ingredients. Plus a treat that's also, less than 5 ingredients you likely already have on hand.
Monday: Gemelli with Broccoli Rabe, Bacon, and Chickpeas
Penne works well in this dish if gemelli isn't available.
Pantry Checklist:
• Broccoli rabe
• Gemelli OR penne pasta
• Center-cut bacon
• Garlic cloves
• Can of no-salt-added chickpeas
Tuesday: Easy Oven Baked Chicken Tacos
If you don't have cooked chicken handy (canned, frozen, or fresh), swap the chicken for a combination of mashed canned beans and whole canned beans. Add the seasoning and you have a simple taco filling from the pantry. Top with your favorite taco toppings. Serve with rice or your favorite grain.
Wednesday: Cabbage Roll Chicken Enchiladas
