What to Cook (Feb 3 – 7): Double Duty Dinners
Doubling our cooking efforts this week with healthy and easy Double Duty Dinners. From rotisserie to curry, meatloaf to soup — It’s what’s for dinner this week!
Super Bowl Sunday will be a cooking marathon, and a feast for all things rich, delicious, and even decadent. From cheesy dips to spicy eats. A foodie dream to be sure.
But come Monday, when it’s time to cook weeknight dinners, I often feel that “What’s for dinner?” panic. The creative juices have been given to Sunday.
So this week, we’re “treating” ourselves to easy yet healthy double-duty dinners. On every night, except for Monday.
The week begins with a cozy and delicious slow cooker Moroccan Lentil and Chickpea Soup that almost makes itself.
Tuesday’s dinner, an incredibly delicious and so easy Instant Pot Rotisserie Chicken becomes Wednesday’s Easy Chicken Curry.
On Thursday, we’ll make a turkey meatloaf that will become Friday’s healthy meatloaf sandwiches.
The treat? Honestly, I couldn’t come up with a double-duty treat. Maybe you can think of one?
Wanting to keep cooking easy, all week long, and classic and winterish, Peanut Butter Cookies seemed like the “right” treat.
I’m baking a double batch, sending a college care package with half, and freezIng the other half. Well… we’ll be keeping a few out too. You know, tea time is always better with a treat.

Monday: Crockpot Moroccan Lentil and Chickpea Soup
Getting back to healthy food after Sunday's Super Bowl feast with this throw everything into the slow cooker and forget it. Beautiful flavor, easy prep, delicious dinner! Serve with warm crust bread.
Tuesday: Instant Pot Rotisserie Chicken
Cooking for two nights. Tonight it's an easy Instant Pot whole chicken that is seriously tender and delicious. I'm serving with mashed sweet potatoes and broccoli. Reserve 2 to 3 cups of leftover chicken for tomorrow night's dinner.
Wednesday: Easy Chicken Curry
A quick curry recipe I've made for years and still love. A quick and easy dinner with last night's reserved chicken. Serve over rice and dinner is done!
Thursday: Turkey Meatloaf
"This healthy meatloaf recipe, made with lean ground turkey is easy and delicious." I'm serving with roasted red potatoes and fresh green beans. Serve a few slices for Friday night's easy dinner!
Friday: Healthy Meatloaf Sandwiches
You know that half of the reason you make meatloaf is so you can use the leftovers for sandwiches the next day. Besides this open-face sandwich with caramelized onions, there are more than a few ways to reinvent meatloaf the next day: Try topping with a fried egg or cover with sautéed peppers and onions.
WHAT YOU'LL NEED
1 slice leftover meatloaf, ½ inch thick
Caramelized onions
1/3 cup shredded smoked mozzarella
1 slice sourdough bread, toasted
Handful of greens (optional)
HOW TO MAKE IT
1) Preheat the broiler.
2) Top the meatloaf slice with the onions and cheese. Place underneath the broiler until the cheese is fully melted, about 2 minutes.
3) Line the bread with the greens (if using), then place the meatloaf on top.
