What to Cook (Mar 23-27): Easy Pantry Dinners
Easy Pantry Dinners: Whether you’re working from home or sheltering in place — or simply social distancing, we’re making healthy dinners with ingredients mostly found in our pantries.
It’s strange times. But also… wonderful times.
We’re having to rethink everything from work life to family life. And yes — even food life. Shopping and supplies are harder to get, and in some cases, not even available at local markets.
This week we’re planning dinners that have either simple ingredients, or are recipes with ingredients easily swapped for items on hand. Stocking our pantries with canned vegetables and meat is a an easy swap for fresh ingredients in recipes.

Monday: Broccoli, Cheese & Rice Casserole
This is an easy start to the week with this healthy skillet broccoli, cheese and rice casserole. "Cooking the casserole in a skillet keeps the flavors and textures fresh--no mushy, sad broccoli! Serve this easy side with baked chicken for a family-pleasing healthy dinner that's ready in just 30 minutes."
Tuesday: Delicious Sloppy Joe's
A childhood classic comfort food that's healthy too. I may be swapping the ground beef for ground turkey -- depending on what my meat market has, which getting a little skimpy from time to time. I'm serving with baked sweet potato fries.
Wednesday: Sesame Noodles with Chicken
"Classic sesame noodles become a healthy meal with lean chicken and tons of veggies in this quick recipe for Asian noodles. Be sure to rinse the spaghetti until it's cold, then give it a good shake in the colander until it's well drained."
Thursday: Spring Veggie Frittata
This easy frittata features fresh asparagus and spinach. A light and healthy spring dinner that I'll serve with slices of Italian loaf bread.
Friday: World's Best Pasta Sauce with 3 Ingredients
Yes - it's the world's BEST pasta sauce with 3 simple ingredients. Add spaghetti or your favorite pasta, and some protein if you wish. I'm serving with steamed broccoli.
Treat: 3 Minute Microwave Apple Crisp in a Mug
It may be a little fall-ish -- but it's also comfort food -- and it's also easy -- and delicious -- and best of all -- it's quick!
