Here’s What to Cook (Oct 1 – 5): Quick Fall Dinners

Quick Fall Dinners: From roasted chickpeas to butter chicken, an Instant Pot Mexican dish, pan-fried Halibut… and even a fun twist on cheeseburgers. It’s what’s for dinner this week!

Plus, as always, a treat that celebrates the fall season. Slow Cooker Pumpkin Spice Granola. I’m making mine early so I can snack all week. 

For Tuesday’s Garlic Butter Chicken Salad dinner, we will roast a whole chicken. To save time, consider meal prepping by roasting the chicken over the weekend.
