What to Cook (Feb 3 – 7): World Dinners
For this week’s weeknight dinner meal plan, we’re celebrating Valentine’s Week by traveling internationally and eating healthy World Dinners — It’s what’s for dinner this week!
It’s Valentine’s Week! And we’re celebrating all week long.
My sister is in Hawaii, my niece and nephew are in Germany, my son is planning his trip to Italy.
And I’m experiencing wanderlust.
Of the food variety, that it.
Plus, with Valentine’s Day on Friday, I couldn’t think of anything more fun, romantic, or more Valentine-ish than celebrating the day with French cuisine.
Which thought quickly led to the idea that we shouldn’t confine our culinary travels to one mere day. We’re on vacation, at home, and eating “out” all week long.
I’m kind of excited about this week of healthy world eating.
Where We’re Traveling to for World Dinners Week
We’re traveling from Thailand to Chile, Sweeden to Morocco, and ending in France on Friday, of course.
The treat? The easiest French dessert you’ll ever make!

Monday: Thai Curry Vegetable Soup
"The beauty of this Thai Curry Vegetable Soup is that you can use just about any vegetable you like, although I try to at least have some sort of leafy green. Other vegetables that would be great choices include: spinach, kale, collard greens, cabbage, mushrooms, bean sprouts, snow peas, carrots, or red bell peppers."
Tuesday: Chilean Lentil Stew with Salsa Verde
"This healthy vegetarian recipe is hearty and satisfying. Don't skip the parsley relish (salsa verde)--it's easy to make and lends a tangy accent that balances the flavors of the lentil stew. We prefer French green lentils for this stew, as they don't fall apart while cooking; however, regular brown lentils (found in most supermarkets) will also work."
Wednesday: Swedish Meatballs (no heavy cream)
