What to Cook (Jan 6-10): Winter Comfort Dinners
Winter Comfort Dinners are filled with hearty flavors, and filling ingredients. These dinners are healthy and perfect for blustery or snowy winter weeknights.
As we settle into January, weeknight dinners need to be hearty, cozy, and comforting.
They also need to be quick and easy. Because while it would be wonderful for January to be a quieter month, following the holidays… it’s not likely.
These dinners are healthier versions of some of our favorite comfort foods… January style.
For a weekend treat, we’ve opted for a quick, I mean super quick, dessert that you will love. Only four ingredients, and a short stay in the oven.
Winter comfort foods, it what’s for dinner this week.
Have a great week everyone!

What to Cook (Jan 6-10): Winter Comfort Dinners
Monday: Pasta with Cabbage, Winter Squash and Walnuts
"The secret to the dish’s flavor is the vinegar. Cider vinegar is best, but again, this is a pickup dinner, so pick up what you’ve got. Just make sure to cook it down so that you get its flavor, not its bite. Oh, and there’s another surprise ingredient: dried cranberries — there for tartness, color and chew."
Tuesday: Instant Pot White Chicken Chili
"This White Chicken Chili is proof that chili doesn't have to be red and beefy to be delicious. Plus, this version is ready in a fraction of the time thanks to the pressure cooker!"
Wednesday: Golden Instant Pot Chicken and Rice
"Brown rice cooked in creamy coconut milk along with juicy chicken, fresh veggies, and healing golden spices such as turmeric and ginger, this healthy one-pan dish has earned the highest level of praise."
Thursday: Cajun Salmon - 30 Minute Cajun Salmon with Salted Lime Butter
"This buttery fish is topped with so much delicious spice that your taste buds will straight up lose it.
And then! It’s topped with even more flavor as you scoop on a touch of salty lime butter while it’s still hot. It melts all over and runs down the sides and is worthy of so much more than one exclamation point, I swear."
Friday: Simple, Homemade BBQ Chicken Pizza
Using store-bought pizza dough -- or a homemade dough stashed in the freezer, this pizza comes together quickly. Perfect for a Winter Friday night!
Weekend Treat: Easy 4 Ingredient Baked Pears
These Baked Pears are EASY and delicious with 4 simple ingredients. Drizzled in honey, warmed with spiced cinnamon and crunchy with granola. A go-to desserts without the guilt!
