Preheat the oven to 350°F and spray muffin tin generously with nonstick cooking spray. Then, whisk together the eggs, milk, salt, and pepper.

In each muffin cup, add bacon and shredded cheese.
Pour the egg mix over the bacon and cheese, leaving a little room at the top.

Bake for 20 minutes on the middle rack of the oven until the egg bites are just set. They will begin to pull away from the edges of the muffin tin. Remove and leave to cool, or serve warm.
