Make the pastry (click here for instructions!), or roll out a ready made crust. Then make the filing. Whisk the cornstarch and water, then set aside.

In a saucepan, combine the fruits, sugar, orange, andmint sprigs. Cook until some juices begin to release. Stir in the cornstarch and bring to a boil; reduce the heat and simmer for 2 minutes. Remove the mint sprigs and refrigerate.
Spoon the filling into the middle of the pastry, leaving a border. Fold the border over the filling, pleating when necessary and brush with egg wash and sprinkle with sugar. Bake, then cool for 30 minutes before slicing and serving.
