These Red, White, and Blue M&M Cookies are deliciously soft and chewy, bright with the pastel colors of 4th of July. With a vanilla sugar cookie base, they're easy to bake, no chilling, and perfect for summer!
Preheat the oven to 350℉ and line a 9-inch square baking pan with parchment paper, leaving an overhang to remove the cookie bars from the pan after baking easily.
In a medium bowl, whisk the flour, salt, and baking soda and set aside.
In a large bowl, whisk the melted butter, brown sugar, granulated sugar, and cocoa powder until no lumps remain. Add the eggs and vanilla extract and whisk to combine.
Add the dry flour mixture to the wet ingredients and mix until combined. The dough will be soft and thick. Fold in the chocolate chips and M&Ms. Be sure to reserve or add extra M&Ms to the top of the cookie bars before baking.
Transfer the dough to the prepared baking pan and press into an even layer. Add additional M&Ms to the top and push them into the dough slightly.
Bake for 20-23 minutes, or until they just begin to lose the glossy sheen, the edges are set, but the center looks soft. I begin checking at about 18 minutes. Be careful not to overbake. Cool completely before cutting into bars. Store in an airtight container for up to 3 days or freeze for up to 3 months.but
