Add the chicken bones and/or carcass to the middle of a 6-quart slow cooker. Scatter chopped vegetables around the bones in the crockpot insert. Season with salt and pepper to taste, and add the garlic cloves, bay leaf, and fresh herbs.
Pour water into the crockpot to cover the bones. It's okay if the water level is within an inch of the top. Cook on low for at least 8 hours, or until the broth has reached a beautiful golden color.
Remove the larger pieces of bones and vegetables with a slotted spoon and discard them. Then, strain the broth in the slow cooker using a fine-mesh sieve or cheesecloth for a clearer broth into a bowl.
Transfer the bone broth into jars and cool. Then refrigerate for up to 3 days and freezer in freezer-safe containers for up to 3 months.
