Season the chicken with salt and pepper to taste and place in the bottom of a 6-quart slow cooker.
In a bowl, whisk the soy sauce, honey, garlic paste, garlic, and vinegar together. Pour over the chicken. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, or until the chicken reaches an internal temperature of 165 degrees F on an instant-read thermometer.
Remove the chicken from the crockpot and let cool slightly on a plate. Whisk the cornstarch and water together until completely mixed, and then pour it into the liquid in the slow cooker. Cover and cook on HIGH for 15 minutes, or until slightly thickened. For a thicker sauce, you can carefully transfer the liquid to a saucepan, bring it to a boil, and cook until reduced and thickened; about 5 minutes.
Shred the chicken with two forks and place back into the cooking liquid, stir to coat, and serve over rice and top with green onions and toasted sesame seeds!
