1 15-ozcan red kidney beansor black beans, rinsed and drained

Instructions
Preheat oven to 400° with oven rack in the middle position.
Cook ground beef and half of the sliced green onions in an oven safe skillet, like a cast iron skillet, breaking up the meat until it is no longer pink, about 5 minutes. Stir in chili powder, cumin, oregano, cayenne, salt, and pepper to taste and cook until fragrant, about another minute. Remove the beef from the skillet and set aside.
Wipe the skillet clean with a paper towel. Spread half of tortilla chips evenly in the bottom of the skillet. Sprinkle half of the shredded cheese, cooked beef, and kidney beans over the chips. Repeat layering with remaining chips, cheese, beans, and beef.
Transfer the skillet to the oven and bake until the cheese is melted and just beginning to brown, 10 to 15 minutes. Garnish with remaining scallions, chopped tomatoes, and other ideas listed below. Serve immediately.
