This oh-so-simpleSkillet Peach Crisp is an easy summer dessert that's delightfully sweet with fresh peaches and a crumbly oat topping with brown sugar, oats, pecans, and warm spices. A decidedly delicious way to celebrate summer.
Preheat the oven to 350 degrees F and generously butter the bottom and sides of a 10-inch ovenproof skillet (like a cast iron skillet).
Toss sliced peaches in brown sugar, cornstarch, and vanilla; arrange evenly in the bottom of the prepared skillet.
Make the topping: Mix oats, flour, brown sugar, pecans if using, cinnamon, nutmeg, and salt in a bowl. Mix in the room temperature butter with a spoon or your hands until crumbly. Sprinkle evenly over peaches, pressing down lightly.
Bake until crispy and golden and the filling is bubbling around the edges; 25–35 minutes.
