Easy Skillet Peach Crisp made with sweet summer peaches and a buttery brown sugar oat topping with pecans and warm spices. A simple summer dessert ready in about 30 minutes.
Preheat the oven to 350 degrees F and generously butter the bottom and sides of a 10-inch ovenproof skillet (like a cast iron skillet).
Toss sliced peaches in brown sugar, cornstarch, and vanilla; arrange evenly in the bottom of the prepared skillet.
Make the topping: Mix oats, flour, brown sugar, pecans if using, cinnamon, nutmeg, and salt in a bowl. Mix in the room temperature butter with a spoon or your hands until crumbly. Sprinkle evenly over peaches, pressing down lightly.
Bake until crispy and golden and the filling is bubbling around the edges; 25–35 minutes.
Notes
Peaches: Fresh peaches are my favorite when they're in season, but frozen or canned peaches can also be used. If using canned peaches, you will need two (15-oz) cans.
Storage: Refrigerate leftover peach crisp in an airtight container. It can also be frozen for up to 2 months; reheat in a 350°F oven until warmed through.
