Instructions
Preheat oven to 350° and line a baking sheet with parchment.
Whisk together melted butter, vanilla, egg, honey, and softened or warmed peanut butter. Add mashed banana.
In a separate bowl combine oats, flour, baking powder, and salt. Fold into the peanut butter mixture and add chocolate chips.
Portion cookies onto prepared baking sheet with a cookie scoop. Bake until golden, about 9 minutes in my oven, depending on the size of each cookie.

Storing Cookies: The cookies will keep in an airtight container at room temperature for 4-5 days, in the refrigerator for up to 1 week, and in the freezer for up to 1 month.
