Preheat oven to 350℉ and grease an 8.5-inch loaf pan or a 9 x 5-inch loaf pan and set aside.
Combine the mashed banana, Greek yogurt, applesauce, oil, and brown sugar in a large bowl or stand mixer. Then mix in the vanilla and eggs.
Add flour, oats, salt, baking soda, baking powder, and cinnamon; mix until just combined. Be careful not to overmix the batter, which makes the bread more dense. I like to mix only until there are no streaks of flour remaining. Pour the batter into the prepared pan.
Bake for 50 to 55 minutes, or until the top is golden and a toothpick inserted in the center comes out mostly clean. Allow the bread to cool completely before removing from the pan and slicing. Store in an air-tight container at room temperature for up to 5 days.
